All about food

Today’s food is going to be a little tricky. Every Wednesday we have Bible study at our church and beforehand, a together meal with other members. I love this because it means I cook one less night a week, and no dishes! Wahoo!

But as you have probably already guessed, the meals aren’t so healthy sometimes so if you’re a calorie counter like me, Wednesays mean eating a little lighter during the day in case the together meal isn’t so low on the calories. Tonight’s menu is chicken pattie sandwiches, salad bar and dessert. Not sure what type of chicken pattie it is..fried, grilled, broiled, etc. so we’ll have to see about that. Other than that I plan on loading up on the salad bar, which is usually stock full of good veggies.

Today’s food:

B: 3 slices turkey bacon, key lime yoplait yogurt (205 cals)

S: Babybel light cheese, 2 white cheddar rice cakes (130 cals)

L: leftover pot roast (4 oz meat, 1 cup mashed potatoes) (370 cals)

S: gala apple (80 cals)

D: I have 770 cals left for dinner so that should be plenty. Usually my day is more balanced with calories but since dinner is up in the air, this’ll do for today.

Anyway, I’ve been wanting to get into making meals ahead of time so I can cut down on cooking time. I love meals that I don’t have to spend much time in the kitchen with. Case in point, yesterday’s pot roast. I just threw the roast in with some water and seasonings before I left for work, and all I had to make when I got home was mashed potatoes, which don’t require much work.

So I’ve been thinking about make ahead meals and foud a few recipes that might work. I actually have ZERO plans this weekend so lots of time to get cracking in the kitchen.

Balsamic marinated chicken breasts - plan on tossing all of the ingredients in a zip-lock bag before tossing in the freezer. Going to serve with oven roasted brussels sprouts…mmm…

Chicken enchiladas - the calorie count on this is a little scary, but if you substitute fat free sour cream, half the cheese (and used reduced fat cheese) it shouldn’t be too bad.  On this I want to make the filling ahead of time so I can just toss it in the corn tortillas and go.

Potato soup -  I sub turkey bacon and fat free half and half instead of real bacon and heavy cream. According to SparkRecipes.com, this cuts down the calories to just over 200 cals per serving (4 servings… I cut the recipe in half since there’s only two of us). This soup I can just make and freeze and have it ready to pull out whenever… looks like it’s going to be chilly and rainy next week, so it’ll be a good thing to make!
