1/4 cup diced fresh strawberries
2 tablespoons low-fat granola
1 cup (8-ounces) low-fat vanilla yogurt
Fresh mint sprig
Place the strawberries and granola in a small mixing bowl and stir to combine. Spoon half of the mixture into a serving dish. Spoon the yogurt over the granola mixture. Sprinkle remaining mixture of strawberries and granola on top. Garnish with the mint sprig.

4 tablespoons chopped broccoli
2 tablespoons chopped yellow onion
2 tablespoons finely chopped carrot
4 egg whites
1 whole large egg
1/2 teaspoon Mrs. Dash
1 ounce Light Laughing Cow cheese
2 tablespoons fat-free re-fried beans
Lightly spray nonstick cooking spray in a medium saute pan. Then using medium-high heat add broccoli, onion, and carrots. Saute for 2 minutes or until tender, but bright. While the veggies are cooking, whip eggs with a wire whisk until foamy and light. Add seasonings. Pour the eggs over the veggies, cover, and cook for about 2 minutes or until the eggs are almost done.
Crumble the cheese over the omelet and spread re-fried beans over the cheese. Fold the omelet in half and allow to cook 2 more minutes over low heat.
This is a great-tasting recipe that is loaded with fiber and protein. The protein will help keep you going all day long. Best of all it only has 247 calories.
1-1/2 cups cold nonfat milk or soy milk
1/2 cup soft silken tofu
2 ripe medium bananas, frozen and cut into 1-inch chunks
2 tablespoons unsweetened natural cocoa powder
1 teaspoon honey
1/2 teaspoon pure vanilla extract
Combine all ingredients in a blender or food processor. Blend until smooth. Pour into glasses and serve immediately. Freeze any leftovers for later. This is a great smoothie for the chocolate lover.
Blueberry Bran Mini Muffins
1-1/2 cup unprocessed wheat bran or oat bran
1 cup whole wheat flour
2 tablespoons ground flax seed
1-1/4 teaspoon baking soda
1 teaspoon ground cinnamon
1/8 teaspoon salt
3/4 cup 1% milk
1/3 cup honey
1 ripe banana, mashed
2 tablespoons olive oil
1 teaspoon pure vanilla extract
1 cup fresh blueberries
Preheat oven to 400 degrees. Coat 24 muffin cups with nonstick cooking spray or use muffin cups.
In a medium bowl, combine bran, flour, flax seed, baking soda, cinnamon and salt. In another bowl combine the rest of the wet ingredients and mix until smooth. Then make a well in the dry mixture and pour 1/3 of the liquid mixture in and stir until smooth. Add the remaining liquid mixture and stir until just combined. Add the blueberries and stir again.
Spoon 2 tablespoons into each muffin cup. Then bake for about 8 minutes. Cool for about 10 minutes and enjoy.
These muffins are only 76 calories each and are a great source of fiber.
