4 Tasty Ways to Prepare Alfalfa

Alfalfa is an uncommon vegetable that is being seen more and more often in the grocery store. Though this vegetable may look strange, when prepared correctly it is actually quite delicious. If you are new to alfalfa, consider eating it raw, fried, steamed or even in your meal replacement beverages.

What Is Alfalfa?

Alfalfa is a type of leafy green vegetable that is rich in fiber, as well as in a number of vitamins and minerals. While alfalfa is often used as an addition to sandwiches, there are a number of unique ways in which it can be prepared. For best results, choose alfalfa that is grown locally, and is as fresh as possible.

1. Raw

One of the best ways in which alfalfa can be prepared is simply by serving the vegetable raw. However, instead of simply adding the leafy green to a plain old sandwich, consider using it as an addition to salads. Alfalfa is not only a healthy addition to any salad, but also provides a unique taste that will keep your guests guessing about the ingredients. Be sure to rinse off any alfalfa before adding it to the salad for best results.

2. Fried

Another great way that alfalfa can be prepared is through frying. When you fry alfalfa, you get a product that is similar to cooked spinach, both in taste and texture. To fry alfalfa, start by heating a small amount of olive oil or another type of unsaturated fat in a large frying pan. Once the oil is hot, place the alfalfa into the pan. Allow the alfalfa to cook for around five minutes, stirring on a regular basis. Remove from the heat, and serve as a side to chicken, beef or fish.

3. Steamed

Steaming alfalfa is another popular way in which to cook the vegetable. Steaming alfalfa is great because not only does it provide you with a tasty end product, but it is also the healthiest way in which to cook the vegetable. Steaming alfalfa does not require the addition of fat, salt or other additives, and therefore will result in a very low calorie dish. To steam alfalfa, bring a large pot of water to a boil. Place a metal strainer over the top of the pot, and place in the alfalfa. Finally, place a lid over the strainer. Steam the alfalfa for around five minutes, or until fork tender. Remove from the heat, and serve as a side dish.

4. In Beverages

Alfalfa can be used to create meal replacement shakes rich in vitamins and minerals. Experiment with the combination of fruits and vegetables added to your shakes in order to find a great tasting recipe.
