3 Healthy Birthday Cake Ideas

Birthday cake often isn't very good for you. It's usually loaded with sugar and fat. But that doesn't mean you can't enjoy a healthy, delicious birthday cake. Try one of these recipes.

Sugar Free, Vegan Apple Spice Cake

Since this cake recipe doesn't contain traditional ingredients like eggs and milk, the batter it produces might seem odd. Don't be alarmed; this is normal for non-traditional cake recipes.

To make this sugar free birthday cake, you'll need:

  • 1/2 cup molasses
  • 1 cup applesauce
  • 1 tsp cinnammon
  • 1/2 tsp cloves
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 cup flour
  • 1 tsp ginger
  • If you want your apple spice cake to taste like chocolate, add two tablespoons of unsweetened cocoa powder.

Mix the molasses and applesauce together (in vegan recipes, applesauce serves as a substitute for eggs), then add the other ingredients and mix thoroughly. Grease an eight inch square baking pan and bake your apple spice cake for 30 to 45 minutes at 350 degrees F.

Carrot Cake

This recipe makes a nine inch square, double layer birthday cake. You'll need:

  • 2 1/2 cups finely grated carrots
  • 2 1/2 cups apple juice concentrate
  • Vegetable spray
  • 2 cups whole wheat flour
  • 1 1/2 cups raisins
  • 1/2 cup vegetable oil
  • 4 egg whites
  • 2 whole eggs
  • 3/4 cup unsweetened applesauce
  • 2 tbsp baking powder
  • 1 tbsp cinnamon
  • 1/2 cup wheat germ
  • 1 tbsp vanilla extract
  • Wax paper

Preheat your oven to 350 degrees F. Line two nine-inch square baking pans with wax paper and spray the paper with vegetable spray (or grease it with vegetable shortening if you prefer). 

Put your grated carrots and one-cup, plus two tablespoons of the apple juice concentrate into a saucepan and bring the mixture to a boil. Lower the heat and simmer for 15 to 20 minutes, until the carrots are tender. Put them in a blender and puree until the mixture is smooth in texture. Add the raisins and blend again until the raisins are finely chopped; allow the puree to cool.

Mix the flour, wheat germ, baking powder and cinnamon in a mixing bowl. Add 1 1/4 cups of the apple juice concentrate, as well as the whole eggs and whites, vanilla and oil. Mix well and fold in the puree.

Pour your batter into the baking pans and bake for 30 to 45 minutes. Allow the cakes to cool partially before removing them from the pans to cool completely on a cooling rack. Frost with cream cheese frosting.

Cream Cheese Frosting

This cream cheese frosting is sugar free. The recipe should make enough frosting to frost the double layer birthday cake above. 

You'll need:

  • 1/2 cup apple juice concentrate
  • 16 ounces low fat cream cheese
  • 1/2 cup finely chopped raisins
  • 2 tsp vanilla extract
  • 1 1/2 tsp unflavored gelatin

Put two tablespoons of the apple juice concentrate to one side and put the rest of the juice concentrate in the blender, along with the vanilla, the raisins and the cream cheese. Blend until smooth, and then put the mixture in a large bowl.

Put the remaining two tablespoons of apple juice concentrate in a saucepan with the gelatin. Bring it to a boil and stir until the gelatin dissolves.

Add the gelatin mixture to the cream cheese mixture and mix well. Refrigerate for 30 to 60 minutes.
