3 Gluten Free Meal Ideas

Gluten free meal ideas are beneficial if you are suffering from Celiac disease or any other health condition where you’re allergic to gluten. You might also be trying to improve your health by eliminating gluten from your diet. Here are some gluten free meal recipes that you can try.

1. Breakfast: Gluten Free Breakfast Bars

A breakfast bar is a great meal idea, especially for those mornings when you don’t have much time to prepare an elaborate meal. Another good thing about breakfast bars is that you can make a batch in one cooking session. In a bowl, mix together some gluten free oats, sesame seeds, sunflower seeds, pumpkin seeds, sultanas and mixed spices. Set aside. In a saucepan, pour some condensed milk and add some butter and sugar. Heat the saucepan gently while stirring the contents with a wooden spoon. Once you have a smooth mixture, remove the saucepan from the heat. Pour your condensed milk mixture in the bowl of oat mixture. Mix all the ingredients together before pouring into a cake tin. Bake at 350 degrees F until the cake turns golden brown. Once removed from the oven, wait until the bar cools before slicing it with a knife to make smaller sections. Place in an airtight container and store in the refrigerator.

2. Lunch: Chicken and Leek Stir Fry

With the right ingredients, stir fry dishes are not just healthy but are also quick and easy to prepare. For this gluten free recipe, start by cutting boneless chicken breasts into bite-sized strips. Place the chicken strips in a bowl and sprinkle with some ground black pepper and soy sauce. Since you want to make a gluten free meal, pay attention to the type of soy sauce you’re using. If possible, opt for soy sauce brands that are labeled “Gluten Free”. Leave the chicken to marinade for at least 10 minutes, or overnight if you have time. Coat a frying pan or wok with some olive oil and cook the chicken for a couple of minutes. Start adding peppers, carrots, onions and leeks. Stir fry the ingredients for four more minutes. Add some bean sprouts, sliced mushrooms and any other vegetables that you want to use. For extra flavor, pour the leftover marinade sauce into the pan. Once the chicken is cooked, place the mixture on some boiled rice.

3. Dinner: Baked Omelet (Greek-Style)

If you like omelets, you’ll surely love this baked gluten free recipe. Start by preheating your oven and greasing a round-shaped ovenproof dish. Boil some rice in salted water for about 8 minutes. After cooking, drain the rice and refresh. Put some olive oil into a saucepan and add the leeks. Cook some leeks until they are tender. Add crushed garlic and grated zucchini. After a minute or two, add eggs, feta cheese, long-grain rice, chopped mint and dill. Add some salt and pepper or other gluten-free seasonings that you prefer. Transfer the mixture into the round dish and bake for about half an hour. Top the omelette with some lightly fried tomatoes and onions.
