1. Spicy Peanut Chicken Wraps
- 2/3 cup baked chicken breast
- 2 tbsp. peanuts
- 1 tbsp. hot sauce (optional)
- 1 cup slaw mix consisting of cabbage, broccoli, carrots and cauliflower
- 2 whole wheat tortillas
- ¼ cup scallions
To begin, slice the chicken breast and scallions and chop the peanuts. Add chicken, scallions, peanuts, slaw and hot sauce to a warmed skillet. Cook until warmed throughout, approximately 8 minutes. Split chicken mixture between the two tortillas and enjoy!
2. Southwest Cobb Salad
This salad includes mixed greens, grilled chicken, shredded cheese, diced tomatoes, broccoli, carrots, corn and black beans--served with a side of cilantro ranch dressing.
3. Beef with Broccoli
- 3 oz. of lean beef
- 1 cup steamed broccoli
- 2 tsp light margarine
- 1 medium baked sweet potato
The Mayo Clinic-recommended lean cuts of beef include top round, strip steak and tenderloin steak. The steak can be seasoned with salt, pepper and additional herbs and spices to taste and should be broiled or baked. Steam 1 cup of broccoli and season with margarine, salt and pepper, if preferred. Finally, bake one medium sweet potato until tender.
4. Chicken Tacos with Corn and Rice
- 1 corn tortilla
- 2.5 oz. of baked chicken breast without skin
- 1.5 oz. of cheddar cheese
- 1 tbsp of guacamole
- 1 tbsp of salsa
- ½ cup of corn
- ½ cup of Spanish rice
Prepare the one chicken taco by filling a corn tortilla with sliced baked chicken breast, cheddar cheese, guacamole and salsa. Serve with corn and Spanish rice, both of which can be lightly seasoned with margarine.
5. Spaghetti with Meat Sauce
- 1 cup pasta of your choice, preferably whole wheat
- ½ cup tomato sauce
- 3 oz. lean ground beef
- 1 slice whole wheat bread, toasted
- 1 tsp olive oil
- 1 clove of garlic
Cook pasta according to the directions, eliminating salt. In a warmed skillet, add olive oil and minced garlic. After 30 seconds, add ground beef and cook until no longer pink. Drain pasta and serve topped with sauce and ground beef. Enjoy with a slice of toasted bread.
